I'm an engineer, my knowledge don't come for free :P
And I wish it were like that and not the Laplace transforms, advanced integration and differentiation, etc. I have to do.

Well it doesn't fit too thematically as geralt is a very lone wolf character and doesn't play too well with others. Perhaps if another game is released in the series set in another time about the witchers and not just geralt.
People have complained about not having an option to play as a female in the story.
There are decisions they have made to be true to the source material and theme, and to not compromise on just to increase it's gameplay features.

It would be pretty simple to get around the "lone wolf char" by adding in a separate co-op mode with chars only used for that.
Or do like Assassin's Creed and just have everyone play as that char. Which would mean you wouldn't have to change the story at all.

The only grounds for coop would be a prequel. You could maybe add a coop mode based in the past but I would guess the devs haven't thought about that as it would involve a lot of work. The devs put so much work into the witchers single player that they would have to create a whole second game which would put a lot of pressure on them. The witchers is not their only game so they just mightn't have the resources for a multiplayer department. Not without abandoning a current project or delaying the game release for a year or two.

I am also not sure how much of witchers culture is covered in the books outside of geralt's experiences so it would be more difficult to flesh out.

As it stands the original author doesn't recognise the witchers series as part of the witchers series he wrote. He is an old man who doesn't have time to play videogames so he hasn't even played them to judge them but in his eyes, anything not only by himself is not proper witcher material.

The witcher series is a perspective story, not observational. That is why it focuses on geralt and postures him as the one and only as the books cover how he is different to everyone else. From an artistic standpoint you couldn't create more of him and stick close to the source material.

Assassin's creed makes up their own story and so they can make the changes they want to fit to a game. The witcher tries to fit a game to a story, not a story to a game. The first one wasn't a great game at all. The graphics and mechanics weren't great, they were functional but nothing amazing. The story and dialogue were the reason for playing it. The world and it's inhabitants were richer than many other games as it was all inspired by a great book series.
